Ingredients
2c. Grilled eggplant
2c. Rotisserie chicken breast (96092)
¾c. Extra virgin olive oil
½c. Sun-dried tomatoes, chopped
1.5T. Tahini
1T. Lemon juice
1T. Shallot, minced
2t. Toasted sesame seeds
1t. Salt - 1.5 t. Garlic powder
1t. Granulated sugar
¼t. Xanthan gum
1T. Fresh parsley, chopped
2t. Fresh mint, chopped
1t. Dried lemon peel
½t. Ground fennel seed
Directions: Puree the eggplant with olive oil, tahini and xanthan gum. In a separate bowl, break rotisserie chicken into desired piece size. Add eggplant puree to the chicken, and combine until all ingredients are well incorporated. Serve with fresh veggies and pita chips.

Directions: Finely chop or shred the beef. Add remaining ingredients and stir until well incorporated. Serve with Pita chips or fresh veggies.

½c. Coconut milk
⅓c. Pineapple juice
¼c. Diced roasted red pepper
¼c. Lime juice -
1T. Granulated sugar -
1.5T. Rice vinegar -
2t. Salt -
1t. Black pepper -
1t. Granulated onion -
½t. Crushed red pepper -
½t. Yeast extract
Directions: Dice pork into 1/4" pieces and set aside in a large bowl. Using a food processor, blend cream cheese and coconut milk until smooth. Add cream cheese mixture to the diced pork and stir until combined. Serve with your favorite dipper.

1.5c. Seared turkey breast
½c. Mayonnaise or salad dressing
½c. Dried cranberries
⅓c. Orange juice
1T. Granulated sugar
1T. Rice vinegar
1t. Granulated onion
½t. Salt
2t. Fresh sage, chopped
½t. Black pepper
¼t. Ground nutmeg
¼t. Ground bay leaf
¼t. Fresh orange zest
Directions: Roughly dice turkey into 1/4"-1/2" pieces. Using a food processor, blend cottage cheese until smooth. Add diced turkey and cottage cheese to a large bowl and stir in all remaining ingredients until well incorporated. Serve with your favorite cracker.
