Appearance:

Red-brown exterior with some varying from pink to brown interior typical of a medium to medium-well cooked steak, variable dimensions with relatively uniform size, typical protein striation interior character, translucent red-brown liquid purge with some shine, opaque off-white fat pieces throughout, few dark fine pieces may be visible.

Texture:

Meat is firm enough to hold form when manually sliced or diced, but yields easily with typical bite pressure, purge is free flowing liquid.

Flavor:

Savory, salty, cooked beef, allium (onion, garlic), black pepper, herb.
